Founded more than 10 years ago by Chef Ovidio Gabela—trained at the prestigious Le Cordon Bleu Peru and The French Culinary Institute in New York—El Dorado has established itself as a benchmark of gastronomic excellence.

The team now welcomes Chef Joaquín Gabela, who studied at Le Cordon Bleu Spain and earned a Bachelor's Degree in Gastronomic Administration from the Universidad Internacional del Ecuador. His vision complements the restaurant’s proposal, reflecting a creative, technical, and authentic international cuisine.

At El Dorado, we let the ingredients speak for themselves. We carefully select the freshest products and handle them with respect, allowing each one to be the true protagonist of the dish.
